Mediterranean butter beans with cheese

Ingredients
2 tbsp olive oil, as needed
4 garlic cloves, pressed and sliced
1/4 tsp chili flakes (optional)
2 pints cherry tomatoes, halved
A handful of fresh parsley, chopped
2 teaspoons honey
½ teaspoon dried oregano
1.5 (20 oz) can of butter beans or other white beans, drained and rinsed
Salt and pepper, to taste (some canned beans are salty others have no salt)
Halloumi or other cheese (mozzarella, feta, or gouda work well)
½ lemon
Instructions
Heat the oil in a large skillet over medium heat.
Add the garlic and sauté until fragrant, about 1 minute then add the chili flakes if you want a little heat.
Add the cherry tomatoes and cook until they begin to soften and release their juices, around 5–7 minutes.
Stir in the honey, oregano, and butter beans. Season with salt and pepper.
Simmer until the sauce thickens slightly, about 5 minutes.
Add slices of halloumi (or other cheese) on top. Place under the broiler until the cheese starts to brown
Finish with a squeeze of lemon juice and a sprinkle of fresh parsley.
Serving Suggestion
Serve warm with crusty bread with olive oil or over a bed of couscous or quinoa for a complete meal.
